Even in an age of niche eateries, Chicago’s XO Marshmallow Cafe is bound to stand out. Funded by Kickstarter and slated to open in June, this restaurant will specialize in—you guessed it!—marshmallows. Eater Chicago reports that the fluffy, white cubes will come in a variety of flavors—such as champagne, salted caramel and Nutella—and will be served alongside coffee. If all goes well, XO’s proprietors say they may eventually open a marshmallow-themed bar.
