This sounds like a match made in heaven- soft serve ice cream and hard cider. There's a place called Busky Cider in Richmond, Virginia that came up with the idea and it's a huge hit. The cidery uses a $5,500 device that uses a binding agent to turn the alcohol into soft serve. No dairy is involved. The cool thing is they can make it in a variety of flavors including watermelon rosemary, Thai tom yum, and pomegranate habanero.
