Theresa's Weekend Diary 5.3.21


How was your weekend? We experienced both Fall and Summer here in Michigan. What the heck? LOL

Without getting an answer from Mother Nature whether it was safe to do so, last Friday we hung our "summer sign" up outside. Was it a mistake? I hope not! We have seen fisherman and pontoons, speed boats and sail boats on the lake so I'm crossing my fingers warmer weather and summertime fun are really here!

Anyone who knows me knows that I'm not one to spend money on myself too often so it was a pretty big deal when we ordered a brand new egg-poaching pan! Now that I think about it, it's not just for me it's for the family LOL For as long as I can remember I've been sentimentally using a pan my Grandma used to use but before it totally falls to pieces from wear and tear, I wanted to finally retire it. Maybe I'll display it on a kitchen wall - that would be kind of cool actually!

My husband put the pump in my Mom's waterfall in her yard. That's a sure sign that summer is close, right? Look what she has growing in the pool part of it? Ugh! Dandelions! But, before all the flowers are fully in bloom, it's good to keep at least some dandelions around for the bees who are here and ready to do their bee thing for nature.

Here I go with the "trying something new" thing again and this time it was making apple enchiladas! So super easy and we already had all the ingredients in the pantry. I wonder why I waited this far in life before making this yummy dessert?? Let me know if you want the recipe!

I spent much of Saturday card-making because it was rather chilly and damp outside. I was in heaven! Here's a design I made for my best friend in Texas for Mother's Day. I think it looks better in person rather than a photo but you get the gist of it. If you're into card making like me, please feel free to share pics of your creations - I'd love to see them!
